The Reverie Saigon concludes its “The Essential Elements” culinary with The Convergent Night

Following four exquisite evenings inspired by the four elements – Water, Earth, Air, and Fire – “The Essential Elements Dining Series” has reached its grand finale with “The Convergent Night”. Invisible yet ever-present, the elements converged to create an experience both singular and enchanting. Within the elegant setting of Café Cardinal, guests were treated to a mesmerising and innovative culinary spectacle by masters, bringing this series to a resounding and unforgettable close.

“The Convergent Night” was made even more remarkable by the unprecedented gathering of seven renowned culinary masters in one night:

  • Chef Hoàng Tùng (Å by TUNG) – Element of Water
  • Chef Luke Nguyễn & Chef Trịnh Đình Vịnh (Vietnam House Restaurant) –  Element of  Earth
  • Chef Lâm Huỳnh (MAGURO Studio) – Element of Air
  • Chef Siu Hin Chi (Ying Yee Club Hong Kong, Two Michelin Stars) & Chef Wong Fu Keung (Long Triều Restaurant, One Michelin Star) – Element of Fire
  • Chef Marcelo Geraldini (Executive Chef, The Reverie Saigon)

Together, they composed a symphony of flavour and creativity, orchestrating a captivating culinary journey that enchanted every sense.

To heighten the evening’s allure, the atmosphere was imbued with free-spirited and romantic melodies of live jazz. The graceful and emotive harmonies flowed seamlessly through the night, enriching the ambience with warmth and enchantment.

The culinary journey unfolded like a crescendo of emotions, beginning with The Origin, a delicate amuse of abalone slow-cooked in exquisite butter, melded with yuzu jelly and Kaviari Osciètre caviar, known as the “black pearl of the sea”. Still Flame followed, telling the tale of a simmering fire, where matsutake mushrooms were stewed in superior stock at a low and precisely controlled heat to preserve their full aroma and nutritional value. At this point, Earth’s Embrace created a bold intertwining of French duck breast marinated in brown butter and Vietnamese fish sauce, slow-cooked with lemongrass and chili, and served alongside fresh ice plants and aromatic truffles. With the appearance of Brocade Cloud, the Japanese-style steamed ISE egg custard emerged, boasting a cloud-like texture that perfectly embraced the richness of foie gras and the subtle sweetness of charcoal-grilled sea eel. As a true art of fiery sculpture, Flame’s Caress saw shrimp flash-fried at the perfect temperature to retain their succulent crispness and sweetness, delicately complemented by creamy egg white sauce. The pinnacle of the evening was Highlands Tide, a culinary canvas of Japanese A5+ Satsuma Wagyu seasoned with traditional Vietnamese spices such as galangal and lemongrass, then charcoal-grilled and served with seaweed potato purée and rich oyster sauce. The finale, Lingering Echo, offered a Panna Cotta made from fresh coconut and cream, paired with warm Grappa sauce cooked with mango and blueberry.

The culinary journey was brought to a truly elegant close with exceptional chocolates from Socolatier. These exquisite confections mirrored the evening’s ascending narrative, beginning with The Royal Bloom, which presented the gentle and pure essence of Japanese rose, sakura, and yuzu. Following is The Imperial Embers with notes of smoky Lapsang tea and aged mandarin peel. Finally, The Regal Root offered a profound depth, blending earthy Peruvian dark chocolate with winter truffle and a drop of Rémy Martin XO. Each bonbon told its own unique story, woven with passion and artistry, bringing the series to a flawless and satisfying close.

Adding to the evening’s magnificence, CAO Fine Jewellery unveiled its exquisite and unique Legendary – Paradise Bloom collection. This masterpiece is a culmination of a unique design language and the supreme craftsmanship of master artisans. More than just jewellery, it is a magnificent tribute to the elegance of women. The collection’s centrepiece is a violet-blue Tanzanite, embraced by sapphires and diamond pavé, creating a stunning gradient effect and reflecting a sophisticated and dynamic beauty.

The success of “The Essential Elements Dinner Series” was made possible by the shared passion for culinary and the unwavering support of the esteemed guests and partners.
