Michelin-Starred Long Trieu Announces – Chef Angus Chan As Executive Chef

Proudly located on the 4th floor of the luxurious The Reverie Saigon, the Michelin-starred Long Trieu has long been a premier destination – a sanctuary preserving and celebrating the essence of authentic Cantonese cuisine within an ambiance deeply infused with Asian royal heritage. Today, Long Trieu embarks on an inspiring new chapter with the appointment of its new Executive Chef, AngusChan.

With nearly two decades in the world of fine dining, Chef Angus Chan has been shaped through years of rigorous experience in some of Hong Kong’s most prestigious kitchens. A graduate of the Chinese Culinary Institute and an alumnus of The Chinese University of Hong Kong (CUHK), one of Asia’s leading academic institutions, he has pursued a disciplined approach to gastronomy – one rooted in a deep understanding of tradition before embracing contemporary innovations.

From leaving his mark at the one-Michelin-starred Golden Valley and Lei Garden, to serving as Senior Wok Chef at Rùn (a two-Michelin-starred restaurant at The St. Regis), and most recently, as Executive Sous Chef at Spring Moon in the legendary The Peninsula Hong Kong – Chef Chan has proven his mastery by upholding the rigorous standards of these culinary icons.

Beyond his leadership in the kitchen, Chef Chan is a familiar presence on the international culinary stage, having earned an impressive collection of accolades throughout his career, including:

  • Team Gold at Macau International Chinese Cuisine Chef King Competition in 2025
  • Champion of Master Chefs Best Award in 2024
  • The World Master Chef Championship for Cantonese Cuisine in both 2017 and 2023

In this upcoming chapter, Chef Chan will collaborate with Long Trieu’s Culinary Advisor, Siu Hin Chi – the mastermind behind Hong Kong’s two-Michelin-starred Ying Jee Club who boasts a legendary career collection of 30 Michelin stars. Bringing his masterly control of heat (Wok Hei) and a deep expertise in herbalism and nutrition to honour and elevate traditional Cantonese heritage, Chef Chan promises to unveil exclusive tasting experiences unique to Long Trieu, expanding a culinary philosophy that transcends conventional boundaries. Here, each creation becomes a harmony of master craftsmanship, creative spirit, meticulously selected ingredients, and a cultural narrative expressed through flavour.
